New York Cheese Cake

I just got a visit from a long lost friend from New York. Though it was only for a while, but felt so great. Especially for we didn’t see each other for more than 15 years!

Maybe because of the visit from that old friend, I felt like making something ‘New Yorker’. That’s why I baked this cheese cake for weekend’s dessert. I didn’t have any sour cream, and just used plain yogurt instead. Still the result was good enough. A wee bit sour but still okay.

New York Style Cheese Cake

Bahan:

500 g (2 kotak) keju krim (Philadelphia Cream Cheese), lembekkan pada suhu ruang
200 g gula pasir halus (kastor)
1 sdm tepung mazeina
3 butir telur besar (@60 g)
3 sdm jus lemon (air lemon, peras dari lemon segar)
1,5 sdt vanilla extract (Kalau tidak ada, hilangkan. Jangan diganti dengan esens vanili)
1/4 sdt garam
500 ml krim asam (sour cream)


Lapisan orange jelly
, campur dan tim sampai transparan:
125 ml jus orange, saring
3 sdm gelatin bubuk
sedikit pewarna orange (optional)


Peralatan khusus:

– loyang bundar bongkar pasang 20 cm, tinggi 5 cm
– loyang persegi atau roasting pan untuk au bain mari (tingginya jangan lebih tinggi dari loyang bongkar pasang, karena akan menghambat proses pemanggangan)

Cara membuat:

1. Panaskan oven 180 derajat Celcius. Olesi dasar loyang bongkar pasang dengan mentega, lapisi dengan kertas roti, lalu olesi kertas dengan mentega pula. Bungkus dasar dan bagian luar loyang dengan 2 lapis heavy duty aluminium foil untuk mencegah adonan merembes keluar.
2. Dalam mangkuk yang besar, kocok cream cheese dan gula hingga sangat lembut. Kocok ke dalamnya tepung mazeina, lalu tambahkan telur satu demi satu, kocok sampai rata. Tambahkan jus lemon, vanilla extract dan garam, kocok lagi. Masukkan sour cream, kocok sampai tercampur.
3. Tuang adonan ke dalam loyang bundar. Taruh loyang bundar dalam loyang persegi yang berisi air panas setinggi 2,5 cm. Panggang selama 45 menit.
4. Setelah selesai pemanggangan, matikan api, tapi biarkan pintu oven tertutup. Dinginkan cake dalam oven selama 1 jam. Keluarkan dan pindahkan ke rak kawat, lalu dinginkan lagi hingga mencapai suhu ruang (1 jam). Tuang adonan orange jelly ke atas permukaan cheesecake. Tutup dengan plastik lengket dan simpan di lemari es semalaman.
5. Penyajian: Keluarkan cake dari loyang, potong cake menjadi12 bagian. Cheesecake enak dimakan polos atau hidangkan dengan potongan jeruk orange.

Ingredients

500 g (2 packs) Philadelphia Cream Cheese, softened at room temperature
200 g caster sugar
1 tbs cornstarch
3 large eggs (@60 g)
3 tbs fresh lemon juice
1,5 tsp vanilla extract (do not replace with vanilla essence. just omit it if you don’t have any).
1/4 tsp salt
500 ml sour cream

Orange Jelly Coating, mix and stir over low heat until dissolved
125 ml orange juice, strain
3 tbs gelatine powder
a few drops of orange colouring (optional)

Special utensils:
– 8 inch- deep round springform pan
– shallow roasting pan for waterbath/au bain marie

Directions

1. Preheat oven at 180 Celcius degree. Grease the springform pan. Base with baking sheet and grease. Enfold the base and outer part of the pan with 2 layers of heavy duty aluminium foil to prevent from leeking.
2. In a big mixing bowl, beat together cream cheese and sugar using electric beaters until very soft. Beat in cornstarch, then add the eggs one at a time; beat thoroughly after each addition. Add lemon juice, vanilla extract and salt, then beat some more. Add sour cream, beat until incorporated.
3. Pour the batter into springform pan. Put the springform pan in the roasting pan containing hot water with 2,5 cm high. Bake for 45 minutes.
4. After done, turn off the heat but let the oven closed. Let cool the cake inside the oven for 1 hour. Remove from the oven and transfer to wire rack, then let cool until reaching room temperature. Pour orange jelly coating over the cake surface. Cover with cling wrap and chill in the fridge overnight.
5. Serving: Remove the cake from the pan, and cut into 12 pieces. Serve with mandarin orange wedges.

    hai ti, gue lagi pengen bikin cake yang dasarnya dialasi pie crust. di allrecipes banyak banget yang pakai unbaked pie crust siap pakai atau pie crust yang dibuat pakai graham crumbs. krena gue inget lu pernah posting cheese cake, gue mampir sini deh krena mikir lu mungkin pernah bikin pie crust atau pernah beli pie crust siap pakai di suppa. tapi ternyata cheese cake-nya yang versi lain ya ti. hmm, kudu blogwalking lagi ni…

  3. Sar… gue pernah bikin cheesecake pake alas crust dari biskuit, but i wasn’t happy with the result. Makanya gak gue posting deh.. Cheesecake-nya gak masalah, tapi crust-nya gak oke. Pecah-pecah ancur.
    Next week gue rencananya mau bikin lemon tart pake pie crust, kalo hasilnya OK gue posting deh..😀
