Soup to comfort

Last week all of us caught cold, and that was enough to make us felt ‘miserable’. Thank’s God the doctor said it was only かぜ (kaze), not influenza. (That cold fever is different from influenza, i just recently happened to know either).

This kaze thing has brought us to seek for food that could warm the body up. And this vegetable soup was surely something comforting, both for the sore throat and the tummy. The aromatic cloves and cinnamon burst out pleasant scent to respire as well. And since garlic is also good as self-medication to cure cold fever, I used quite a lot of them.

Clear Meat & Vegetables Soup


300 gr ground beef, cubed
50 gr carrots, sliced
2 medium-sized potatoes, peeled, cubed
1,5 L water
1 stalk spring onion
1 stalk celery
5 cloves garlic, crushed
1/2 onions, sliced
2 tomatoes, cut
1 cube beef bouillon
2 tbs butter
1/4 tsp cloves
1/4 tsp cinnamon
2 tsp sugar
Ground nutmeg


– Cut off the leaves from celery stalk and spring onion. Chop the leaves then set aside.
– Make a ‘bouquet garni’ from celery and spring onion stalk by tying them up together using cotton strings.
– Combine water, beef, garlic and beef bouillon in a big soup pot, then bring to boil over medium heat. Skim off any foam from the broth.
– Meanwhile, melt the butter in a saucepan. Add the chopped onions, stir until caramelized. Remove from heat, then pour into the soup.
– Add potatoes, carrots and the bouquet garni into the soup.
– Add salt, pepper, sugar, cloves, cinnamon dan nutmeg. Stir well, then continue to cook until the meat is tender (approximately 1 hour).
– Remove from heat. Serve while hot with tomatoes, chopped celery and spring onions.


Sup Daging Sayuran


300 gr daging sapi, potong kotak
50 gr wortel, potong-potong
2 buah kentang ukuran sedang, kupas, potong kotak
1,5 L air
1 batang daun bawang,
1 batang seledri
5 siung bawang putih, keprek
1/2 btr bawang bombay, cincang halus
2 buah tomat, potong-potong
1 butir kaldu sapi kotak
2 sdm mentega
1/4 sdt cengkeh bubuk
1/4 sdt kayumanis bubuk
2 sdt gula pasir
Bubuk pala

Cara bikinnya

– Potong daun dari batang seledri dan daun bawang, kemudian rajang halus. Sisihkan.
– Buat ‘bouquet garni’ dari batang seledri dan barang daun bawang dengan cara mengikat keduanya jadi satu menggunakan benang katun.
– Rebus air, daging sapi, bawang putih dan kaldu sapi bubuk dengan api sedang sampai mendidih. Hilangkan busa yang mengambang di permukaan kaldu.
– Sementara itu lelehkan mentega dalam wajan, kemudian tumis bawang bombay sampai wangi. Angkat, kemudian tuangkan ke dalam kuah sup.
– Masukkan potongan kentang, wortel dan bouquet garni ke dalam sup.
– Tambahkan kayu manis, cengkeh, garam, merica, bubuk pala dan gula. Masak sampai daging empuk (kira-kira satu jam).
– Angkat, hidangkan panas-panas dengan tomat, rajangan daun seledri dan dan daun bawang.

– Bouquet garni is a bundle of herbs tied together and used to prepare soup or stews by boiling it together with other ingredients. The bundle could consist of any herb desired, and for this recipe I only used celery and scallion/spring onion.

– Do not overuse cloves and cinnamon. A pinch is enough for the scent, but using too much will only make the soup taste (IMHO) bitter.
